Here’s another easy peasy appetizer, small plate or side dish! These look and taste fancy but also combine a low carb veggie with one of my favorite high fat comfort indulgences! Just under 1 net carb per piece!
Spinach Artichoke Zucchini Bites
makes roughly 20 bites
2 fresh zucchini
1 8oz block cream cheese
1 cup frozen spinach
6 marinated artichoke hearts
1/4 cup sour cream
2 tbsp mayo
1/4 cup grated parmesan
1tsp garlic powder
1tsp onion powder
1 tsp black pepper
Preheat oven to 400F. Slice the zuccinis into 1/4 inch rounds, arrange on a sprayed baking sheet. Put spinach in microwave safe dish & microwave 2 minutes, then drain as much water as possible. Dice the artichokes.
Heat the cream cheese in the microwave until soft, then add the drained spinach, artichokes, sour cream, mayo, Parmesan & spices.
Top each zucchini round with a heaping spoonful of the cream cheese mixture.
Bake for roughly 30 minutes until golden brown on top.
These would be a hit for any holiday party or meal. I’ve even made hollowed out zucchini stuffed with this mixture as well. It’s simple & a hit here at our house!
